What garam masala really means.
The word literally means hot spice, and it enhances the taste of food. Garam masala is a blend of more than one spice, each with a specific and unique aroma. It plays an important role in marinations of kebabs and in gravies.
There are many versions of garam masala. Ours is specifically made for kebabs and is a combination of flavourful spices like mace, nutmeg, cinnamon, green cardamom and rose petals with deeper and more robust spices of coriander seed, cumin, pepper, cloves and black cardamom.
Traditionally used in kebab marinades and rich gravies, this versatile spice blend can also be added to biryanis, curries and marinades. A little goes a long way, bringing warmth, depth and irresistible aroma to every dish.

Stir it through slow-cooked gravies for a rounded, aromatic finish.
Biryanis and curries
Add a pinch at the layering stage or near the end of cooking a curry.
Near the end
Long cooking can flatten its delicate roasted-spice aroma. Add it late.
