Riverina lamb shoulder braised low and slow with Kashmiri chilli, fennel seed, dried ginger and a whisper of asafoetida. No tomato, no cream, no yoghurt-thickened shortcut. The Wazwan tradition, plated in Bella Vista.

Ask a Kashmiri grandmother what's in rogan josh and she'll list four things: mustard oil, Kashmiri chilli, fennel and asafoetida. What's not in it matters just as much — no tomato, no onion, no yoghurt, no cream. The deep red colour is chilli and rattan jot; the depth is thirty years of technique.

We stay honest to it. Our lamb shoulder braises for three hours in whole spices until the fat renders back into the gravy. The chilli is Kashmiri Mirch — deeply coloured, gently warm. What arrives at your table is red, clean and long on the palate.

It is not a heat dish. It is a depth dish.
